A turkey about 3 kg clean
1 kg of minced pork / veal
2 raw eggs
2 boiled eggs
A glass of dry wine (sherry)
4 slices of ham cut into strips
For the sauce need olive oil, garlic, onion, mushrooms, tomato, carrot and a little brandy.
Also prepare a seasoning mix made with two tablespoons of salt, a teaspoon of ground black pepper, ½ teaspoon ground cinnamon and a pinch of nutmeg.
Season them inside the turkey with the mixture, ensuring it is well spread. In a bowl, put ground beef, ham, sherry and 2 raw eggs and season well with salt and spice mixture.
